Regular readers know that I LOVE quinoa. The nutty whole grain is a complete source of plant based protein and is packed with filling fiber. My experiments with quinoa thus far have been confined to use as a side dish and an addition to soups and stews. However, I recently read that it’s commonly eaten for breakfast in South America and served similarly to oatmeal. I adore oatmeal in the morning and it makes a very healthy addition to baked goods as well.
So I decided it was time to bake with quinoa. Since I didn’t feel like driving to the grocery store, I figured I would just throw in whatever I had on hand. Three batches later, Quinoa Apple Bread was born. This lovely loaf combines quinoa, whole wheat flour, oatmeal and tasty apples. Best of all? It’s completely vegan! I used olive oil and unsweetened apple sauce instead of butter and eggs. The dense, sweet bread is insanely filling and will healthily satisfy your sweet cravings. Each loaf makes about 8 servings and can easily be frozen.
- 1 cup whole wheat flour
- ¾ cup rolled oats, divided
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ cup + 1 tbsp olive oil
- ½ cup raw sugar
- ½ cup unsweetened apple sauce
- 1 tsp vanilla extract
- 1 cup cooked quinoa, cooled (approx ⅓ cup dry)
- 1 medium granny smith apple, cored and diced
- ⅓ cup raw walnuts, chopped
- 1 tbsp brown sugar
- Preheat oven to 375
- In a mixing bowl, combine flour, ½ cup oats, baking powder, baking soda, cinnamon and ginger
- In a separate bowl, whisk sugar in olive oil until dissolved
- Add apple sauce, vanilla extract and quinoa to wet mixture, mix
- Add wet ingredients into dry ingredients
- Fold in apples and walnuts
- Pour batter into a greased baking pan
- Bake for 15 minutes
- While baking, prepare the topping: with a fork, mix together ¼ cup oats, 1 tbsp olive oil and 1 tbsp brown sugar
- Spread over the top of the bread and bake for another 20 minutes, until a knife inserted comes out clean






ok, i still have not tried quinoa, and i have no idea how that happened. but i love quick breads so much, so i’m thinking this might be the perfect way to try! i just love that oatmeal streusel topping you put on here!

I love to make healthy muffins as an alternative to granola bars full of sugar and other stuff for my kids’ lunchboxes. A slice of this bread looks like another great option!
