Curried Squash Fries with Spicy Ketchup

Greetings readers! I am blogging today from home since work was cancelled because of the hurricane. I hope you are all dry and safe and have power. We’ve been quite lucky so far (fingers crossed). As much as it’s nice to have a day off, I’m feeling a little stir crazy already. It’s no secret that I am OBSESSED with squash. It is one of my favorite things about fall. Tasty squash is healthy, local and so simple to prepare. Stuck inside on this rainy, hurricane soaked afternoon I had a brainwave: Could I make fries out of squash? I am a fry-oholic. I love fries of all varieties. I […]

Grilled Eggplant Bruschetta

I have an overabundance of eggplants in my garden right now. We ate the first one last week (on an eggplant and pepperoni pizza – which is now my favorite combination – look for this recipe in the coming weeks). And we are probably about a week away from having another 4-5. So I’ve been racking my brain for lots of tasty and simple eggplant recipes. Unfortunately, eggplant can be tricky in the summer because it needs to be cooked. We’re in the middle of a heatwave right now so I’m hesitant to turn on my stove, let alone my oven. The solution? Grilling! Grilled eggplant is super delicious and […]

Homemade Pitas with Garlic Scape Hummus

I had a wonderful girls night with my amazing friends Meghan and Nacie. As I’ve mentioned before, I am very lucky to have some really wonderful and impressive friends. The three of us got together to network and brainstorm our entrepreneurial ideas, and discuss maintaining work life balance while pursuing multiple things at once. Nacie just published her book, The Finch Effect: Five Strategies to Adapt and Thrive in Your Working Life and Meghan just left her 9-5 to pursue her own consulting business. Needless to say, we had an amazing time eating, drinking and chatting. I wanted to make something special to nibble on and I was inspired to […]

Raspberry Mango Salsa

So I have been a very bad blogger this week. It turned out to be one of those week’s where all my good intentions went out the window and I didn’t post. Well I am going to make it up to you with a delicious and simple weekend recipe. For me, spring means color. Fresh tasty fruits and veggies, beautiful blooming flowers and warm sunshine. Unfortunately it’s 39 degrees out right now, but as my mom taught me, it’s the thought that counts. So, I wanted to create something colorful and delicious. I had a perfectly ripe mango and wanted to take advantage so I threw together this yummy raspberry […]

Whole Wheat Cheez-Its

A few weeks back I was blown away by my girl Ann’s recipe for Homemade Cheez-Itz! They looked so super delicious and easy I knew I just had to try making some ASAP. If you’re not reading Ann’s blog, Cooking Healthy for Me, then you MUST start immediately because it’s amazing and full of super yummy healthy recipes. So. I decided to give cheez-its a try. But I figured I would try and Dara them up a bit. So, I made some tweaks, tried out a few different versions and came up with a recipe that incorporates some healthy elements into the cheez-it. First, I used whole wheat flour and […]

Baked Horseradish Crab Cakes

So after the successful crab rangoon experiment of last week, I had a lot of yummy blue crabmeat left over. Craig suggested crab cakes and my mind immediately started to spin out all the healthy possibilities. I LOVE crab cakes. But I don’t love that they are deep fried, filled with mayo, and usually very light on the actual crab. So I decided that I could fix this by whipping up my own version. Two tasty batches later, I’ve worked out all the kinks. Owing to my current horseradish fixation, I decided to incorporate the healthy root into this recipe. Crab and horseradish are a winning combo. The flavor of […]
