Sometimes you just need a quick healthy meal you can put together in a short amount of time. I came home from work tonight starving and debating just making a grilled cheese and calling it a night. Instead I decided to throw together a 30 minute stir fry combining some healthy and satisfying ingredients. I love variations of fried rice. Chili Stuffed Sweet Potatoes
Leftovers! We don’t have a lot of them in my house because Craig has a very big appetite. But my Chicken Corn Chili recipe made plenty of them. Instead of just eating the tasty chili, I decided to find a way to use the leftovers. Sweet potatoes are a healthy and filling ingredient for any meal. One of my New Year’s Resolutions is to do more freezing. I spend a lot of time cooking and yet, I often come home from work and there is nothing to eat. Thanksgiving! A whole holiday devoted to eating delicious food. Every year Craig and I alternate spending Thanksgiving with each of our families.
