Freezer Fridays: Meatballs

One of my New Year’s Resolutions is to do more freezing. I spend a lot of time cooking and yet, I often come home from work and there is nothing to eat. Since cooking meals from scratch 7 nights a week is just not realistic, I really want to make more of an effort to make some good freezer meals. Butternut Squash Mac and Cheese #SundaySupper

 I am so excited to be participating in Sunday Suppers for the first time. The Sunday Supper movement was started by the wonderful Isabel from Family Foodie as a way to encourage people to sit down together and enjoy family meals. Spicy Eggplant Stir Fry

Hello! My posting has been reduced for the past few weeks owing to a big deadline at work. Hopefully October will be a little more calm and I will have lots of time for posting and cooking! Eggplant Puttanesca

My garden is overflowing with eggplant! So much yumminess and I am having a blast coming up with new ideas to enjoy it. Puttanesca sauce is one of my all time favorite things. I discovered it when I was too young to be told what the name means and have loved it ever since. Basic puttanesca sauce is incredibly easy to make, you just take some tasty homemade pasta sauce and add different types of olives and capers. Cherry Tomato Pasta Sauce

My garden is overrun with cherry tomatoes! Back in May, we bought this one tiny little plant and it’s taken over our backyard! I have dozens ripening each week. This is a good problem to have, but I can’t eat them fast enough. Before leaving for vacation I had to use up the most recent batch, so I decided to try making a simple, tasty sauce.  This is such a simple way to use these tasty tomatoes.
