I LOVE falafel. It is one of those foods I only have once in a while from a food truck or a take out restaurant and I always think to myself “I should make this at home.” After Craig and I grabbed falafel last weekend he persuaded me to make a healthier version. As I mentioned last week, April is National Grilled Cheese Month. Until last week, I had not eaten a grilled cheese sandwich for a decade, but after our experiments last weekend I’m hooked! Chicken Caesar Kale Wraps
I haven’t put many sandwiches on the blog yet, so I figured I would start with my favorite. Chicken caesar wraps are delicious, quick and healthy. Unlike traditional caesar salad, which is packed with calories and fat, this version is lighter and filled with vitamins. The key is using a low calorie or light caesar dressing. Shrimp Po Boy with Spicy Remoulade
In honor of Mardi Gras last night, I decided to cook up a New Orleans style dinner. This is an untraditional take on the traditionally calorie and fat laden sandwich. Instead of fried shrimp, I sauteed them with garlic and onions for flavor. To make the creamy base for the remoulade, I used fat free plain greek yogurt instead of mayo or sour cream. This can be whipped up in 15 minutes and is a crunchy, spicy and flavorful dinner or lunch. Best of all, it’s packed with filling protein.
