I love carrot cake. Although I am a self diagnosed chocoholic, I think that, given the choice, carrot cake with cream cheese frosting would probably win out over chocolate cake any day. There is something awesome about making a sticky, sweet and unhealthy dessert out of a simple veggie like a carrot. I think I also associate carrot cake with Spring and Easter. I am currently desperate for spring, which seems like it will never arrive. In fact, the forecast for tomorrow is for more snow. I long for temperatures above 40 degrees! Craving carrot cake the other day, I decided to try my hand at some healthy muffins instead. [...]

Chicken Teriyaki Fried Rice
Sometimes you just need a quick healthy meal you can put together in a short amount of time. I came home from work tonight starving and debating just making a grilled cheese and calling it a night. Instead I decided to throw together a 30 minute stir fry combining some healthy and satisfying ingredients. I love variations of fried rice. I’ve made quite a few versions already: Veggie Fried Rice, Bok Choy Fried Rice, and Turkey Fried Rice. I like these types of dishes because you can combine filling brown rice with lots of healthy veggies and protein. I had some chicken breast and some yummy Veri Veri Teriyaki Sauce, [...]

Red Lentil Cakes with Harissa
So … I took a little hiatus last week. Things did not go according to plan and I couldn’t get up some new recipes. But. The lovely Kim of Cravings of a Lunatic made my Skillet Lasagna and wrote a lovely interview with me. I was so flattered, no one has ever wanted to interview me before! So head on over there and read all about moi. While you’re there, make sure to follow Kim on Facebook, Twitter, Google +, and Pinterest so you can keep up with all her shenanigans. Lentils are one of the world’s most consumed foods. And for good reason, they are cheap, simple to prepare and packed with heathly vitamins and minerals and [...]

Dark Chocolate Chia Seed Pudding
Cha cha cha Chia! I am getting more and more obsessed with chia seeds. I am enjoying them in yogurt, in granola, on salads. I’m hoping to try some chia banana bread soon as well. One of the easiest and tastiest ways to enjoy chia seeds is by making pudding. Because the seeds gel in liquid, they are a great way to make tasty pudding. This pudding is super easy, I just added a bunch of stuff I had in the house, Ghiradelli cocoa powder, stevia for sweetener, and some almond milk. Skim milk or soy would work well too. I got some low calorie whipped cream at Whole Foods [...]

Roasted Beets with Balsamic Drizzle
I made an amazing discovery this weekend. We have a WINTER farmer’s market! Right down the street. I cannot tell you how happy this discovery made me. Lots of local farms, cheese, bread, pastry and other yumminess. The produce was gorgeous and there were many varieties of winter veggies. I picked up three different types of beets (don’t ask me to name them) and they looked so delicious I just had to roast them and make a salad. Now roasted beets is nothing new. This salad is not innovative or interesting or different than what you can get in many restaurants. But it was just SO GOOD that I had [...]

Friday Links & Carbs!
One of the good things about getting older is that you get to really know yourself well. Now that I’m 30, I’ve realized some universal truths about myself that took a while to figure out. I won’t bore you with most of them, but one is my absolute love of carbs. I cannot live without them. I respect the hell out of people who stick to low carb diets and have the willpower to sit still when there is a bread basket in sight. Because that is not me. To me, a life without bread and pasta is just not one worth living. There are many things I can give [...]
