Roasted Garlic Root Vegetable Mash

In putting together my Lamb Supper Club meal, I wanted to make a side dish that was healthy and flavorful but would also compliment the braised lamb shanks. I decided on a tasty root vegetable mash. I decided to use potatoes, sweet potatoes and turnips. But celery root, rutabegas, carrots and parsnips are also tasty possibilities. For flavor, I roasted some garlic. Combined with the natural flavors of the vegetables, it was a nice compliment to the lamb shanks. I used no butter or cream, instead some skim milk was all it took to get a nice, creamy texture. Winter Minestrone

We’ve been having an insane winter. No snow, and crazy temperature fluctuations. On Thursday, I went out to run an errand during lunch and it was 55 degrees. Today, it was 21. Super cold and windy, it was a perfect day for thick, hearty soup. Minestrone is the most ubiquitous Italian soup, there are so many different variations and flavors you can incorporate. Different regions of Italy have different preparations, and many vary seasonally as well. I love minestrone, but I find that in restaurants, it’s usually quite salty. Roast Turnips with Sweet Potatoes and Apples

I saw some purple topped turnips at the store yesterday and decided to give them a try. Turnips are rich in vitamin C, beta carotene and insoluble fiber. They are also a good source of lutein, phosphorus and calcium. I decided to just simply roast these with some sweet potatoes and apples and add a bit of kick via cayenne pepper, balsamic vinegar and walnuts.
